The History of Recipes
Recipes as an idea can be found far back into the far past, in truth as far into history as pharonic Egypt, and maybe even further. In practice though, mostly, these ancient cookbooks were just very simple hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to historians is a series of tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans 25BC a roman called Apicius created some documents which described recipes cooked by wealthy Romans. He describes how the meals were divided into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. This early Roman chef recounts how the cooks of Roman times used a wide range of spices, including a few you will know for example thyme, fennel and asafoetida. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from the holy land, including spices such as rosemary and coriander. The introduction of these new tastes prompted an eruption in publications on food, many of which are kept safe in private libraries. Over the succeeding few centuries, the powerful and rich tried to serve up the most extravagent meals, and consequentially chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, testing, and publishing recipes common in their social group. The arrival of TV gave us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to access thousands of recipes just like those on this web site. |
