The History of Recipes
It is possible to trace the history of written recipes far back into the distant past, certainly as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, these, old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to academics are some ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Later on, in The time of the roman empire around 25BC a roman called Apicius created a few scripts detailing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main meal and desserts, a style of dining still practiced today. This early Roman chef recounts how the cooks of his times were skilled in the use of many different herbs, including some that we all recognise for example thyme, rue and parsley. During the following few hundred years, the families of Europe competed to serve the most extravagent banquests, and because of this cooks and their recipes were much in demand. However, it was during the 19th century that cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, verifying, and recording the recipes of their peers. By the time we get to the 1900s, cookbooks were highly popular as a result of higher levels of literacy, people having more spare time and having more disposable income. |
