The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions way back into ancient history, certainly as far as the Egypt of the Pharoahs, and possibly even further. However, these, old cookbooks were just basic pictorial instructions for preparing meals.
In fact, the oldest recipe found, according to historians are a few tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into Roman times around 25BC a man called Apicius compiled some scripts detailing recipes prepared by wealthy Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the ancient chefs used a wide range of spices and herbs, including a few you will know for example bay, mint and parsley. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and spices from the East, such as parsley, basil and rosemary. The introduction of these new foods and spices led to an eruption in books on cooking, the majority of which are kept safe in private cookery archives. For the centuries that followed, the rich families of Europe competed to lay on the most extravagent banquests, and as a result cooks and their collection of recipes were greatly in demand. Nevertheless, it was during the 19th century that fine cooking and cookery books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to assembling, testing, and writing down the recipes of their peers. The introduction of the TV brought us TV cooks and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes just like those on this recipe site. |
