The History of Recipes
Written cooking instructions as a concept can be traced way back into distant history, at least as far back as the ancient Egyptians, and maybe even further. Interesting though that is, in the main part, these ancient records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to food historians is a collection of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a few documents detailing recipes enjoyed by his fellow Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. He also describes how the cooks of Roman times made use of a good variety of herbs, including some that we all recognise for example thyme, rue and dill. Over the following few centuries, the upper-class families of Wesstern Europe competed to serve up the most exotic banquets, and as a consequence, chefs and their recipes could command a high salary. However, it wasn`t until the 19th century that cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down recipes common in their social group. When we get to the 1900s, cookery publications were highly popular mostly due to more people being able to read, leisure time and having more money to spend. The arrival of TV brings us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on the site you are now reading. |
