Ingredients
BASE
2 cup vanilla wafer crumbs
6 tbsp margarine, melted
BODY
1 each 14-ounce bag caramels
1 can 5-ounce evaporated milk
1 cup chopped pecans, toasted
2 package 8-ounce cream cheese, soften
1/2 cup sugar
1 tsp vanilla
2 each eggs
1/2 cup semi-sweet chocolate pieces,
Directions
BASE: Combine crumbs and margarine; press onto bottom of 9-inch
springform pan. Bake at 350, 10 minutes.
BODY: In 1 1/2 quart heavy saucepan, melt caramels with milk over low
heat, stirring frequently, until smooth. Pour over crust. Top with
pecans. Combine cream cheese, sugar and vanilla, mixing at medium
speed on electric mixer until well blended. Add eggs, one at a time,
mixing well after each addition. Blend in chocolate; pour over
pecans. Bake at 350, 40 minutes. Loosen cake from rim of pan; cool
before removing rim of pan. Chill. Garnish with whipped cream and
additional finely chopped pecans, if desired.

The History of Recipes
It is actually possible to trace the history of recipes back into antiquity, at least as far back as the early Egyptians, and maybe even further. However, sadly, these early records were just primitive hieroglyphic instructions for meal preparation.
In an interesting twist, the oldest recipe found, according to historians is a series of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Later on, in The time of the romans 25BC a man called Apicius created a collection of scripts describing recipes enjoyed by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into appetizers, main meal and desserts, a very modern way of dining. Aspicius also tells us how the ancient chefs used many different aromatic flavors, including a few that are still present in modern kitchens for example thyme, mint and parsley. Later on, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices such as parsley and basil. These new foods and spices created an eruption in recipe books, most of which still exist in private collections. When we get to the 20th century, recipe books were in high demand, due to increased literacy, more spare time and having more money. The TV revolution brought us cooking programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on sites such as the one you are reading now. |
