The History of Recipes
We can follow the history of `recipes` far back into distant history, at least as far as the early Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Progressing into The time of the roman empire 25BC a roman called Apicius wrote a few documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, he tells us how the meals were split into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the chefs of Roman times were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens such as thyme, mint and dill. Later on in the 1400s, people returning from the crusades brought back many foods, spices and herbs from the Middle-East, including spices like coriander, parsley, and basil. The introduction of these new herbs and spices was responsible for an outbreak in recipe manuscripts, some of which still exist in private cookery archives. By the time we get to the 20th century, cook books were in high demand, due to increased literacy, people having increased leisure time and disposable income. |
