The History of Recipes

It is quite possible to prove the history of written cooking instructions back into antiquity, in fact as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that is, these, early records were just basic hieroglyphic or cunieform instructions for meal preparation.

In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`.

Progressing into Roman times around 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman cooks were skilled in the use of many herbs, including many that are still in use today such as basil, mint and dill.

For the centuries that followed, the wealthy families of the West strove to serve the best banquets, and consequentially chefs and their collection of recipes were highly sought after. However, it was during the nineteenth century that fine cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, verifying, and recording popular recipes of the day.

The introduction of the TV brought us celebrity TV chefs and the spin-off recipe books.

Which brings us neatly up to date and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this web site.
