The History of Recipes
We are able to track the history of meal recipes back into ancient history, certainly as far back into recorded history as pharonic Egypt, and possibly even further. In practice though, sadly, these ancient cook books were just simple hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe found, according to historians is a collection of stone tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius created a collection of scripts detailing recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were divided into starters, main meal and dessert, something we still use today. He also recounts how the chefs of Roman times made use of many different aromatic flavours, including a few you will know for example bay, rue and parsley. In the 15th century, people returning from the crusades brought us many spices and herbs from the East, such as parsley and basil. These new foods and tastes was responsible for an explosion in recipe manuscripts, most of which are kept safe in private libraries. By the arrival of the twentieth century, cookery books are in great demand, mostly due to increased literacy, more free time and having more money. The introduction of television gave us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like those on sites such as the one you are reading now. |
