The History of Recipes
Food historians have proved the existence of recipes back into the far past, certainly as far as ancient Egypt, and possibly even further than that. In practice though, generally, these early recipes were just very basic hieroglyphic instructions for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Progressing into The time of the romans 25BC a man called Apicius created a number of documents detailing recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. Aspicius also tells us how the ancient Romans made use of a wide range of spices and herbs, including a few that will be familiar to modern cooks like basil, mint and parsley. Over the next few centuries, the rich families of Wesstern Europe competed to lay on the most exotic meals, and because of this cooks and their recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that fine cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cooking publications are highly popular mostly as a result of higher levels of literacy, people having more free time and being a little richer. Like it or not, the introduction of TV brought us celebrity chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like the ones you can find on this site. |
