The History of Recipes
We can follow the history of written recipes back into the far past, at least as far back as the early Egyptians, and possibly even further than that. However, generally, these old cook books were just simple hieroglyphic recipes for preparing meals.
As we move into The time of the romans 25BC a man called Apicius compiled a collection of scripts which described recipes prepared by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the Roman cooks were skilled in the use of many spices and herbs, including a few you will know such as bay, fennel and parsley. During the next few hundred years, the wealthy families of the West tried to lay on the most exotic banquets, and consequentially the best cooks and their collection of recipes could command a high salary. Even so, it wasn`t until the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, testing, and recording popular recipes of the day. The arrival of television brings us TV chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes just like those on this recipe site. |
