The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions back into history, in truth as far into history as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these ancient recipes were just primitive hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to food historians are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents detailing recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the meals were divided into appetizers, main meal and dessert, a very modern way of dining. Aspicius tells us how the ancient cooks used many different aromatic flavors, including a few that are still present in modern kitchens like thyme, fennel and dill. Over the following few centuries, the powerful and wealthy competed to serve the most exotic meals, and because of this chefs and their collection of recipes increased in prestige. Even so, it was during the 19th century that fine cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collating, trying out, and recording recipes to allow everyone to enjoy them. When we get to the 1900s, cookbooks are highly popular mostly as a result of higher levels of literacy, more spare time and a general increase in wealth. |
