The History of Recipes
It is actually possible to trace the history of recipes back into distant history, in fact as far into history as the ancient Egyptians, and maybe further still. In practice though, generally, these early recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to food historians are a few clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. Later on, in Roman times 25BC a roman called Apicius wrote some scripts which described recipes cooked by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into starters, entrees and afters, something that is very familiar to us today. Aspicius informs us how the Romans made use of a good variety of aromatic flavors, including a few that will be familiar to modern chefs such as basil, mint and asafoetida. In the fifteenth century, people returning from the crusades brought back many new foods and spices from the holy land, such as rosemary and coriander. The introduction of these new culinary ideas was responsible for a surge in manuscripts on cooking, some of which still exist in private libraries. During the succeeding few hundred years, the powerful and wealthy houses tried to offer the most extravagent banquests, and consequentially cooks and their recipe collections increased in prestige. However, it was during the 1800s that formal cookery and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. Like it or not, the introduction of television gave us celebrity TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes such as those found on sites such as this. |
