Ingredients
2 cup mashed bananas
1 tbsp grated orange
1 rind
1/3 cup orange juice
3 eggs
1 cup packed brown
1 sugar
1/3 cup vegetable oil
2 1/2 cup all-purpose flour
1 cup chocolate chips
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
Directions
In bowl, blend bananas, rind and juice. Beat in eggs. Stir in sugar
and oil. Combine flour, chocolate chips, baking powder and soda, salt
and nutmeg; stir into banana mixture just until blnded. Pour into 4
greased 5-3/4- x 3-1/4-inch loaf pans. Bake in 350 degree F oven for
45 to 55 minutes or until tester inserted comes out clean. Let cool
in pan on rack for 10 minutes. Remove from pan and let cool
completely on rack. Makes 4 small loaves.

The History of Recipes
Recipes as a concept can be found way back into the far past, in fact as far back into recorded history as the Egyptians, and quite possibly further than that. In practice though, these, old cook books were just primitive hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe in existence, according to food historians is a series of stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Progressing into Roman times 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were separated into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Aspicius also tells us how the early Romans were skilled in the use of many aromatic flavors, including a few that will be familiar to modern cooks for example bay, fennel and dill. Continuing our culinary historical journey, we have a couple of books from the fourteenth century ; a book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these books are nothing to do with the indian food that is popular today, but rather recipes for the types of food prepared by the chefs of the rich and powerful of that time. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from Arab cooking, including rosemary and coriander. The introduction of these new culinary ideas caused a surge in recipe publications, many of which still exist in private collections. When we get to the twentieth century, cooking books are greatly in demand due to more people being able to read, people having increased free time and having more money to spend. |
