The History of Recipes
It is possible to follow the history of written recipes back into distant history, at least as far into history as pharonic Egypt, and possibly even further. Interesting though that is, mostly, these early cook books were just simple hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe in existence, according to food historians is a series of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Progressing into The time of the roman empire 25BC a man called Apicius compiled some documents detailing recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. He also informs us how the Roman cooks made use of a good variety of spices and herbs, including a few you will know for example basil, mint and asafoetida. Later on in the 1400s, knights returning from the crusades brought us many foods and spices from Arab countries, such as parsley and basil. These new foods and tastes created an eruption in recipe books, some of which are now in private collections. For the centuries that followed, the wealthy families of Europe competed to offer the most extravagent meals, and as a consequence, cooks and their recipe collections could command a high salary. However, it wasn`t until the 19th century that cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and writing down the recipes of their peers. By the time we get to the 20th century, recipe books were in great demand, as a result of more people being able to read, more free time and having more money to spend. |
