The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into the distant past, in truth as far back into recorded history as pharonic Egypt, and possibly even further than that. Having said that, sadly, these early cookbooks were just very simple hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later on, in The time of the romans around 25BC a roman called Apicius created a collection of scripts detailing recipes enjoyed by the Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the cooks of his times were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens like thyme, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought us a variety of foods and herbs from the holy lands, including spices such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices prompted an outbreak in manuscripts on cooking, the majority of which are kept safe in private cookery archives. By the time we get to the 20th century, cookery books are highly popular mostly as a result of better eduction, leisure time and being a little richer. The arrival of television gave us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everyone to access massive numbers of recipes like the ones you can find on this site. |
