The History of Recipes
Experts have proved the existance of recipes far back into antiquity, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, these, old records were just simple hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe discovered, according to experts in ancient history is a collection of tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Later on, in Roman times 25BC a roman called Apicius assembled a collection of scripts describing recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, something we still use today. Aspicius informs us how the ancient chefs were skilled in the use of many different herbs, including a few that are still present in modern kitchens such as basil, rue and dill. In the fifteenth century, knights returning from the crusades brought back many spices and herbs from the holy land, including spices like basil and rosemary. The introduction of these new culinary ideas created an outbreak in manuscripts on food, many of which are now in private libraries. During the succeeding few hundred years, the upper-class families of Wesstern Europe competed with each other to serve up the most exotic banquets, and consequentially the best chefs and their collection of recipes increased in prestige. However, it wasn`t until the 1800s that formal cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and recording the recipes that were being prepared for the better households. By the arrival of the 1900s, cooking books are in high demand, mostly due to better eduction, people having increased leisure time and a general increase in wealth. Like it or not, the introduction of television brings us cooking programs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes like those on the site you are now reading. |
