The History of Recipes
We are able to track the history of meal recipes back into ancient history, certainly as far back into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that is, generally, these early cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts in ancient history is a collection of stone tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Moving our culinary historical trip onwards, there were some books dating from the 1300s : a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these are not about the indian food that appears on menues today, but instead recipes for the types of meals on the tables of the rich people of the period. Over the following few centuries, the upper-class families of the West strove to serve up the most exotic banquets, and as a result cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that fine cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and recording the recipes of their peers. When we get to the 1900s, cookery publications were greatly in demand mostly due to increased literacy, more free time and a general increase in wealth. |
