The History of Recipes
Written cooking instructions as an idea can be observed far back into distant history, in fact as far into history as early Egypt, and possibly even further than that. Interesting though that maybe, generally, these old cook books were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe discovered, according to experts in ancient history is a series of stone tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Progressing into Roman times 25BC a roman called Apicius wrote a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his scrolls, he describes how the roman meals were split into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius also describes how the ancient Romans were skilled in the use of many herbs and spices, including some that we all recognise like bay, mint and parsley. Closer to modern times, there are a couple of books published in the 14th Century : one book entitled `Forme of Cury`, and another called `Curye on Inglish`. Amusingly, these have no connection with the indian food that we all know today, but rather accounts of the types of food enjoyed by the upper classes. Later, in the 15th century, the Crusaders brought back many new foods and spices from the Middle-East, including basil and rosemary. These new spices and herbs prompted an explosion in recipe manuscripts, the majority of which still exist in private cookery archives. By the time we get to the twentieth century, recipe books are starting to become popular as a result of increased literacy, people having more leisure time and having more money. Like it or not, the introduction of TV brought us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like the ones you can find on our site. |
