Ingredients
3 1/2 cup flour
1 1/2 tsp baking soda
1 1/2 tsp salt
2 vanilla beans, split length- wise
3 sticks (1 1/2 c) unsalted
1 .butter, softened
1 cup +2 t firmly packed brown
1 .sugar
1 cup +2 t granulated sugar
3 large eggs
1 1/2 tsp vanilla extract
3 cup semisweet chocolate chips
1 (or chocolate chunks about
1 1 pound)
1 1/2 cup chopped walnuts (about 1/3
1 .lb)
Directions
Preheat oven to 350F. In a large bowl, sift together flour, baking
soda, and salt. Scrape vanilla bean seeds from pods into standing
electric mixer, reserving pods for another use if desired, and add
butter and sugars, beating until light and fluffy. One at a time,
beat in eggs, beating well after each addition, and beat in vanilla
extract. Add flour mixture and beat until dough just comes together.
Stir in chocolate chips or chunks and walnuts (do not overmix). Form
dough into 1 1/2 inch balls and arrange about 2 inches apart on
parchment-lined baking sheet. Flatten balls slightly with a metal
spatula and bake cookies in batches in middle of the oven until
golden, 12 to 15 minutes. Transfer cookies with spatula to racks to
cool.

The History of Recipes
It is quite possible to prove the history of written cooking instructions back into ancient history, certainly as far back into history as the early Egyptians, and quite possibly further than that. Having said that, generally, these early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Progressing into Roman times around 25BC a man called Apicius created some documents detailing recipes enjoyed by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the ancient cooks were skilled in the use of a good variety of herbs, including a few that will be familiar to modern chefs like basil, fennel and asafoetida. Later on in the 1400s, knights returning from the crusades brought back a variety of spices and herbs from the East, including basil and rosemary. The introduction of these new foods and spices was responsible for an outbreak in manuscripts on cooking, the majority of which are now in private collections. The introduction of the TV brings us TV cooks and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to access massive numbers of recipes such as those found on the site you are now reading. |
