The History of Recipes
It is quite feasible to prove the history of recipes far back into antiquity, in truth as far as the Egyptians, and quite possibly further than that. Having said that, generally, these ancient recipes were just very simple hieroglyphic recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to historians are a few stone tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Later on, in Roman times 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by the Romans. He recounts how the meals were split into appetizers, main course and dessert, something that is very familiar to us today. This early Roman chef describes how the cooks of his times were skilled in the use of many different herbs and spices, including many that are still in use today like basil, fennel and dill. In the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from Arab countries, including coriander, parsley, and rosemary. The introduction of these new herbs and spices created a torrent in recipe publications, some of which are now in private cookery archives. Like it or not, the introduction of television brought us TV chefs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like those on our web site. |
