The History of Recipes
We are able to track the history of written recipes back into the distant past, in fact as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that maybe, generally, these early cook books were just simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into The time of the roman empire around 25BC a roman called Apicius created some scripts showing how to cook the recipes prepared by his fellow Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef informs us how the ancient chefs used a good variety of spices and herbs, including some familiar names for example thyme, rue and parsley. In the 15th century, people returning from the crusades brought back many new spices and herbs from the East, including spices such as coriander, parsley, and rosemary. These new spices and herbs caused a surge in manuscripts on cooking, the majority of which are now in academic collections. Over the following few centuries, the powerful and rich strove to serve the most exotic banquets, and as a result chefs and their recipes were much in demand. Even so, it wasn`t until the 1800s that cooking and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and writing down the recipes of their peers. By the arrival of the twentieth century, cookbooks are starting to become popular mostly due to increased literacy, leisure time and having more disposable income. The introduction of television gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to search through thousands of recipes such as those found on this recipe site. |
