The History of Recipes
We are able to track the history of `recipes` far back into antiquity, certainly as far back into history as the ancient Egyptians, and potentially, even further back. However, in the main part, these early records were just very basic hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into The time of the romans around 25BC a roman called Apicius wrote some scripts detailing recipes enjoyed by the Romans. He describes how the meals of wealthy Romans were separated into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the cooks of his times made use of many aromatic flavours, including a few you will know such as thyme, fennel and parsley. Later, in the fifteenth century, people returning from the crusades brought back a variety of spices and herbs from the holy land, including spices like basil and rosemary. These new herbs and spices was responsible for an outbreak in recipe publications, the majority of which are now in private libraries. During the next few centuries, the powerful and wealthy houses competed to serve up the most exotic banquets, and consequentially the best chefs and their collection of recipes were highly sought after. Nevertheless, it was during the 1800s that haute cuisine and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collating, trying out, and publishing the recipes that were being prepared for the better households. The revolution that is television gave us TV cooks and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to search through massive numbers of recipes like the ones you can find on our site. |
