The History of Recipes
Transcribed cooking instructions as an idea can be tracked back into antiquity, certainly as far back into recorded history as ancient Egypt, and maybe even further. In practice though, these, old cook books were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to academics are some ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. As we move into The time of the roman empire around 25BC a man called Apicius compiled a collection of scripts detailing recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, a style of dining still practiced today. Aspicius also tells us how the Roman chefs were skilled in the use of a wide range of aromatic flavours, including many that are still in use today for example bay, rue and parsley. Over the following few centuries, the wealthy families of the West competed to serve the most exotic meals, and as a consequence, chefs and their collection of recipes were much in demand. However, it wasn`t until the nineteenth century that cooking and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, trying out, and recording recipes of the day. When we get to the 1900s, cooking books were highly popular mostly as a result of more people being able to read, increased leisure time and having more disposable income. |
