The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions way back into ancient history, certainly as far back into recorded history as pharonic Egypt, and maybe even further. Interesting though that maybe, sadly, these old records were just very basic pictorial instructions for preparing meals.
Progressing into Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the chefs of Roman times used a good variety of spices, including a few that are still present in modern kitchens like basil, mint and asafoetida. For the centuries that followed, the rich families of Europe competed to serve the most extravagent banquests, and consequentially chefs and their recipes became highly prized. Even so, it wasn`t until the 19th century that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and recording recipes to allow everyone to enjoy them. By the time we get to the 20th century, cooking publications are highly popular as a result of better eduction, leisure time and disposable income. |
