The History of Recipes
Written cooking instructions as a concept can be observed back into the far past, at least as far as early Egypt, and potentially, even further back. Having said that, sadly, these old records were just very simple pictorial instructions for food preparation.
During the time of the Romans a man called Apicius created a few documents describing recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the meals were separated into hors d`oeuvres, main course and dessert, something that is very familiar to us today. Aspicius recounts how the chefs of Roman times were skilled in the use of many different herbs and spices, including some familiar names such as thyme, rue and asafoetida. In the 15th century, knights returning from the crusades brought us many foods and herbs from the Middle-East, including spices like rosemary and coriander. These new spices and herbs caused a torrent in publications on food, some of which still exist in private collections. The arrival of TV brings us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on our web site. |
