The History of Recipes
Food historians have proved the existence of recipes back into history, at least as far into history as the Egyptians, and possibly even further. Interesting though that is, in the main part, these early recipes were just simple hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to experts are some stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Progressing into The time of the romans 25BC a man called Apicius compiled a few documents detailing recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and afters, something that is very familiar to us today. Additionally, he informs us how the ancient chefs used many spices and herbs, including a few that are still present in modern kitchens like basil, mint and dill. As our culinary historical trip moves to more modern times there are two recipe books from the 1300s : a recipe book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, they have no connection with the spicy food that appears on menues today, but rather accounts of the types of meals served to the rich and wealthy people of that time. In the 15th century, the Crusaders brought back many foods, spices and herbs from the East, such as coriander, parsley, basil and rosemary. These new foods and tastes was responsible for an outbreak in cookery books, some of which still exist in private cookery archives. By the arrival of the twentieth century, cooking books were in great demand, due to increased literacy, more free time and disposable income. The introduction of television brought us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to search through thousands of recipes like the ones you can find on this site. |
