The History of Recipes
Written cooking instructions as an idea can be observed far back into distant history, at least as far back into recorded history as early Egypt, and possibly even further than that. Interesting though that maybe, these, early records were just very basic hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe found, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius wrote a collection of documents describing recipes prepared by the Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient Romans were skilled in the use of a good variety of herbs, including some that we all recognise for example thyme, mint and asafoetida. Later on, in the 15th century, people returning from the crusades brought back many foods and herbs from the East, such as rosemary and coriander. The introduction of these new herbs and spices caused an outbreak in manuscripts on cooking, the majority of which are kept safe in academic collections. Over the succeeding few hundred years, the powerful and wealthy competed with each other to offer the most extravagent meals, and as a result cooks and their recipe collections were highly sought after. Even so, it wasn`t until the 1800s that cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collecting, verifying, and writing down recipes common in their social group. The TV revolution gave us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes such as those found on this web site. |
