The History of Recipes
Academics have tracked the existence of recipes far back into history, in fact as far into history as the ancient Egyptians, and maybe even further. Having said that, generally, these ancient cookbooks were just simple hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Progressing into The time of the romans 25BC a roman called Apicius wrote a few documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient chefs used a wide range of herbs and spices, including some that we all recognise for example thyme, rue and parsley. In the 15th century, people returning from the crusades brought back a variety of spices and herbs from the holy land, including spices such as parsley, basil and rosemary. The introduction of these new foods and spices created an outbreak in recipe publications, the majority of which still exist in private libraries. Over the next few centuries, the powerful and wealthy strove to serve up the most exotic banquets, and consequentially chefs and their collection of recipes were highly sought after. Nevertheless, it was during the 1800s that haute cuisine and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and writing down the recipes of their peers. By the arrival of the twentieth century, cook books were greatly in demand mostly due to better eduction, leisure time and being a little richer. The introduction of television gave us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes just like those on our web site. |
