The History of Recipes
Written cooking instructions as an idea can be observed way back into the distant past, in fact as far into history as ancient Egypt, and possibly even further than that. In practice though, mostly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
During the time of the Roman Empire a roman called Apicius created a number of documents which described recipes cooked by wealthy Romans. In his works, Apicius describes how the meals were divided into starters, entrees and afters, a style of dining still practiced today. He also recounts how the cooks of Roman times made use of a good variety of aromatic flavours, including many that are still in use today for example bay, mint and dill. Over the following few hundred years, the families of Europe tried to serve up the most extravagent meals, and because of this the best cooks and their collection of recipes were at a premium. Nevertheless, it was during the 1800s that formal cookery and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and recording recipes common in their social group. The introduction of television gave us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
