The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions far back into the distant past, in fact as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that is, in the main part, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to academics are some stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius created a few documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were separated into hors d`oeuvre, main meal and desserts, a very modern way of dining. Aspicius also recounts how the ancient Romans made use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks such as thyme, fennel and dill. Moving on, there were some books published in the fourteenth century - a cookery book titled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian curry that we all know today, but rather accounts of the types of meals prepared by the chefs of the rich and wealthy people of that period. Later, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices like coriander, parsley, and basil. These new foods and tastes caused an explosion in recipe books, the majority of which are now in private cookery archives. Like it or not, the introduction of TV gave us TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes such as those found on sites such as this. |
