The History of Recipes
It is quite possible to follow the history of recipes far back into ancient history, certainly as far as pharonic Egypt, and possibly even further. Having said that, sadly, these old cookbooks were just basic hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Later on, in The time of the roman empire 25BC a roman called Apicius assembled a number of documents detailing recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main course and desserts, a very modern way of dining. He also describes how the ancient Romans made use of a good variety of spices, including a few you will know such as basil, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab countries, including basil and coriander. These new herbs and spices created a torrent in recipe books, the majority of which are kept safe in academic collections. During the following few hundred years, the upper-class families of the West competed to offer the most extravagent banquests, and as a consequence, the best cooks and their recipe collections were highly sought after. Nevertheless, it was during the nineteenth century that cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down the recipes that were being prepared for the better households. The arrival of television brings us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes such as those found on this web site. |
