Ingredients
1 1/2 cup chocolate wafer cookies --
1 crumbled
3 tbsp butter -- melted
24 oz cream cheese -- softened
1/2 cup sugar
1 tsp vanilla
3 eggs
1/2 lb white chocolate -- melted
1 cup heavy cream
2 tbsp butter
2 tbsp granulated sugar
12 oz semisweet chocolate --
1 broken into small pi
Directions
Heat oven to 350F. Mix crumbs and butter and press onto bottom of
9-inch springform pan. Bake for 10 minutes. Beat cream cheese,
sugar, and vanilla until well blended. Add eggs, one at a time,
mixing well after each addition. Blend in melted white chocolate and
pour over crust. Bake 40 minutes, turn off oven and let cake cool
inside the oven as it cools down. Loosen cake from rim of pan and
cool completely. Chill for at least 4 hours. Remove rim. Heat heavy
cream, butter, and sugar in a heavy saucepan over medium-high heat.
Stir to disolve sugar crystals and then bring to a boil. Put
choclate pieces into a stainless steel bowl and pour boiling cream
mixute over it and let stand for a few minutes. Stir until smooth and
cool. Cover the sides and top of cheesecake with the ganache, smooth,
and chill at least 2 hours to set.

The History of Recipes
Written cooking instructions as a concept can be tracked back into the distant past, certainly as far back into recorded history as ancient Egypt, and quite possibly further than that. Having said that, mostly, these ancient recipes were just very basic hieroglyphic or cunieform recipes for food preparation.
Moving our culinary historical trip onwards, there are a couple of cookery books which appeared in the fourteenth century ; one book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the spicy food that is popular today, but instead recipes for the types of food on the menus of the nobility of those days. Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from the holy lands, including spices like rosemary and coriander. The introduction of these new foods and spices created an increase in books on cooking, many of which are kept safe in private collections. The TV revolution brought us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on our web site. |
