The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into the far past, at least as far back into history as the ancient Egyptians, and maybe even further. However, mostly, these ancient cookbooks were just simple hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe found, according to academics are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Much later, in Roman times a roman called Apicius created a number of documents describing recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and desserts, something we still use today. Additionally, he recounts how the Romans used many aromatic flavors, including many that are still in use today such as basil, rue and parsley. Over the succeeding few hundred years, the families of Europe competed with each other to offer the most exotic banquets, and as a result chefs and their recipes were at a premium. Even so, it wasn`t until the 19th century that cookery and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and recording recipes for their fellow cooks to enjoy. The TV revolution gave us TV cookery programs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on sites such as this. |
