The History of Recipes
Food historians have tracked the existance of recipes far back into distant history, in fact as far back into recorded history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these ancient recipes were just very basic pictorial instructions for preparing meals.
During the time of the Roman Empire a roman called Apicius assembled a collection of documents describing recipes enjoyed by the Romans. In his works, he describes how the meals were separated into appetizers, main meal and dessert, a very modern way of dining. He also informs us how the cooks of his times were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens like basil, rue and dill. Over the following few hundred years, the upper-class families of Europe competed with each other to serve the most extravagent banquests, and as a consequence, cooks and their collection of recipes were at a premium. However, it was during the 19th century that fine cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, testing, and recording recipes that were common in the better off homes of the day. By the arrival of the 20th century, cooking books are in high demand, as a result of more people being able to read, people having more spare time and having more money to spend. |
