The History of Recipes
It is possible to follow the history of `recipes` back into history, in truth as far back into history as early Egypt, and potentially, even further back. In practice though, these, early cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered so far, according to academics are some tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. Later on, in The time of the romans around 25BC a man called Apicius compiled a few scripts which described recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, main meal and dessert, something we still use today. Aspicius also describes how the cooks of his times were skilled in the use of many aromatic flavours, including a few that will be familiar to modern chefs for example basil, mint and asafoetida. Later on in the 1400s, the Crusaders brought back many new foods and herbs from Arab cuisine, including spices like parsley, basil and rosemary. The introduction of these new tastes created an explosion in recipe publications, most of which are now in academic collections. For the decades that followed, the wealthy families of Wesstern Europe tried to serve the most extravagent meals, and because of this the best chefs and their collection of recipes were at a premium. However, it was during the 19th century that haute cuisine and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collating, trying out, and publishing the recipes of their peers. By the time we get to the 20th century, recipe publications are increasing in popularity mostly as a result of higher levels of literacy, people having increased leisure time and having more disposable income. The arrival of television brought us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like the ones you can find on our site. |
