The History of Recipes
Recipes as an idea can be tracked back into the far past, certainly as far back into recorded history as early Egypt, and quite possibly further than that. In practice though, these, early cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. As our culinary historical trip moves on a few more years we have a couple of interesting books from the 14th Century : one book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these two books have no connection with the curry that we all know today, but rather descriptions of the types of meals eaten by the rich and powerful of those days. Over the following few hundred years, the rich families of Wesstern Europe competed with each other to serve up the best banquets, and as a result the best cooks and their collection of recipes were highly sought after. However, it was during the 19th century that cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, testing, and writing down popular recipes of the day. By the arrival of the 20th century, cooking publications are in high demand, due to increased literacy, people having more spare time and being a little richer. |
