The History of Recipes
It is quite possible to track the history of transcribed cooking instructions far back into ancient history, in truth as far into history as the Egyptians, and maybe even further. However, these, early recipes were just very simple hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe found, according to historians are some ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. As we move into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes cooked by wealthy roman citizens. He recounts how the meals of wealthy Romans were separated into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient chefs made use of many spices and herbs, including some familiar names for example basil, rue and parsley. Moving our culinary historical trip onwards, there are some interesting books dating from the 14th Century ; one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the curry that is served today, but rather descriptions of the types of meals prepared by the cooks of the rich people of that period. In the 15th century, the Crusaders brought back a variety of spices and herbs from Arab cuisine, including basil and coriander. These new foods and tastes was responsible for an increase in manuscripts on food, the majority of which are now in private collections. Over the next few hundred years, the powerful families of Europe strove to offer the most exotic banquets, and because of this the best cooks and their recipe collections were greatly in demand. However, it was during the nineteenth century that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and writing down the recipes of their peers. When we get to the 1900s, cooking books were greatly in demand mostly due to higher levels of literacy, people having more leisure time and having more money. The arrival of TV brought us TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes like the ones you can find on this recipe site. |
