The History of Recipes
It is possible to trace the history of written recipes way back into the distant past, in fact as far back as the ancient Egyptians, and maybe even further. In practice though, mostly, these old recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius created some documents which described recipes prepared by the Romans. In his scrolls, he tells us how the roman meals were divided into starters, entrees and desserts, a style of dining still practiced today. This early Roman chef recounts how the cooks of Roman times used a good variety of aromatic flavours, including many that are still in use today such as thyme, mint and asafoetida. In the 15th century, people returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices such as coriander, parsley, and rosemary. These new culinary innovations was responsible for an outbreak in books on cooking, many of which are kept safe in academic collections. Over the next few centuries, the powerful and rich tried to lay on the most exotic meals, and because of this chefs and their recipes were highly sought after. Notwithstanding that, it was during the 1800s that fine cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and recording recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cookbooks are increasing in popularity mostly due to higher levels of literacy, increased leisure time and being a little richer. The introduction of television gave us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on sites such as the one you are reading now. |
