The History of Recipes
We can read the history of meal recipes far back into history, certainly as far as the ancient Egyptians, and possibly even further. In practice though, sadly, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to historians are a few ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. During the time of the Romans a roman called Apicius compiled some scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into appetizers, entrees and dessert, something we still use today. This early Roman chef describes how the Romans were skilled in the use of many aromatic flavours, including a few that will be familiar to modern chefs like basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices like coriander, basil and rosemary. The introduction of these new tastes created an outbreak in recipe manuscripts, most of which are now in private libraries. Over the next few hundred years, the rich and powerful families of the West competed to serve the most extravagent banquests, and consequentially the best chefs and their recipes were greatly in demand. Notwithstanding that, it was during the 1800s that fine cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing recipes to allow everyone to enjoy them. The arrival of TV gave us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
