The History of Recipes
We are able to track the history of `recipes` back into history, certainly as far back as the ancient Egyptians, and possibly even further. However, mostly, these early recipes were just simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe found, according to academics is a collection of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. As we move into The time of the romans around 25BC a man called Apicius compiled a few documents describing recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius also tells us how the Romans made use of many spices, including a few that will be familiar to modern cooks like thyme, fennel and parsley. During the next few centuries, the wealthy families of the West competed with each other to serve the most exotic banquets, and as a result chefs and their collection of recipes were at a premium. Even so, it wasn`t until the 1800s that haute cuisine and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and publishing recipes to allow everyone to enjoy them. By the advent of the 20th century, cooking books were in high demand, mostly due to increased literacy, more spare time and having more disposable income. The revolution that is television brought us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this web site. |
