The History of Recipes
It is quite feasible to trace the history of recipes way back into the far past, certainly as far as the Egypt of the Pharoahs, and possibly even further than that. However, generally, these old records were just simple pictorial recipes for preparing meals.
Progressing into The time of the romans 25BC a roman called Apicius compiled a collection of documents detailing recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvres, entrees and afters, a style of dining still practiced today. Aspicius recounts how the Roman cooks used many aromatic flavors, including a few you will know for example bay, rue and asafoetida. Over the next few centuries, the upper-class families of the West competed to serve the most exotic banquets, and because of this the best chefs and their recipe collections became highly prized. However, it wasn`t until the 1800s that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes common in their social group. By the arrival of the twentieth century, cookery publications were highly popular mostly due to higher levels of literacy, people having increased spare time and disposable income. |
