The History of Recipes
Academics have traced the existence of recipes far back into ancient history, at least as far back as pharonic Egypt, and quite possibly further than that. However, these, old cookbooks were just simple hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans 25BC a roman called Apicius created a collection of documents detailing recipes cooked by wealthy Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Roman chefs were skilled in the use of a good variety of herbs, including a few that will be familiar to modern cooks such as basil, mint and dill. In the 15th century, people returning from the crusades brought us many foods and herbs from Arab cooking, including spices like coriander, parsley, basil and rosemary. The introduction of these new foods and spices was responsible for an explosion in cookery books, the majority of which still exist in academic collections. By the arrival of the twentieth century, cookery books are in great demand, mostly as a result of more people being able to read, people having increased free time and being a little richer. The introduction of television gave us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes such as those found on the site you are now reading. |
