The History of Recipes
It is quite possible to trace the history of recipes way back into the distant past, at least as far back into history as pharonic Egypt, and maybe even further. In practice though, mostly, these old cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
During Roman times 25BC a man called Apicius assembled a number of documents describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, a very modern way of dining. He also informs us how the ancient Romans used many different herbs, including a few that will be familiar to modern cooks for example basil, rue and dill. In the fifteenth century, the Crusaders brought back many foods and spices from the Middle-East, including spices such as basil and rosemary. The introduction of these new tastes prompted an explosion in books on cookery, most of which are kept safe in academic collections. Like it or not, the introduction of television brought us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access thousands of recipes like those on the site you are now reading. |
