Chocolate Pecan Kisses Recipe


Ingredients

3 egg whites
1/4 tsp cream of tartar
3/4 cup granulated sugar
1/2 cup finely chopped pecans or walnuts
1/4 cup sifted unsweetened cocoa powder
1/2 tsp vanilla
1 pinch salt


Directions

Beat egg whites with cream of tartar until soft peaks form. Gradually
beat in sugar until stiff glossy peaks form. Fold in pecans, cocoa
powder, vanilla and salt. Spoon into pastry bag fitted with 1/2 inch
tip. Pipe 1 inch kisses, about 1-1/2 inches apart, onto lightly
greased baking sheets. Bake in 250F oven for about 45 minutes or
until outside is firm but inside slightly soft. Let cool on racks.
Store at room temperature, covered with plastic wrap, for up to 5
days. Makes about 44 cookies.

Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including spices like parsley, basil and rosemary. These new herbs and spices led to a torrent in manuscripts on cookery, the majority of which are kept safe in private collections.

For the next few years, the rich families of Wesstern Europe strove to offer the best banquets, and because of this the best chefs and their collection of recipes were at a premium. Nevertheless, it was during the nineteenth century that cooking and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, verifying, and publishing popular recipes of the day.

The introduction of the TV brings us TV chefs and the spin-off recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on our web site.
