The History of Recipes
Recipes as an idea can be found far back into history, in fact as far into history as the Egypt of the Pharoahs, and potentially, even further back. Having said that, mostly, these old records were just primitive hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to historians are a few clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the romans 25BC a roman called Apicius wrote a few documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into starters, main meal and dessert, a style of dining still practiced today. This early Roman chef describes how the Roman cooks used a good variety of spices and herbs, including many that are still in use today for example bay, fennel and asafoetida. Over the succeeding few centuries, the powerful and wealthy strove to serve up the most extravagent banquests, and as a result the best chefs and their collection of recipes were much in demand. Notwithstanding that, it was during the 19th century that haute cuisine and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, testing, and recording recipes of the day. When we get to the 20th century, cook books were greatly in demand as a result of increased literacy, people having increased leisure time and having more money. |
