The History of Recipes
We are able to follow the history of written recipes far back into history, at least as far into history as the Egyptians, and maybe even further. In practice though, generally, these old records were just simple hieroglyphic recipes for preparing meals.
Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a number of scripts detailing recipes cooked by the Romans. He recounts how the roman meals were separated into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. Aspicius describes how the Roman chefs made use of many different herbs and spices, including many that are still in use today such as thyme, rue and asafoetida. Later, in the fifteenth century, people returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, including spices such as coriander, basil and rosemary. These new culinary innovations prompted a surge in books on cooking, many of which are kept safe in academic collections. By the time we get to the 1900s, cook books were in great demand, due to higher levels of literacy, leisure time and a general increase in wealth. |
