The History of Recipes

Transcribed cooking instructions as an idea can be tracked back into distant history, at least as far as pharonic Egypt, and quite possibly further than that. However, mostly, these old cook books were just very basic hieroglyphic recipes for preparing food.

Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a series of clay tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`.

As we move into The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main course and desserts, a style of dining still practiced today. He also tells us how the Roman cooks used many different aromatic flavors, including a few that are still present in modern kitchens like bay, rue and asafoetida.

Moving our culinary historical trip onwards, there are a couple of interesting books which were published in the fourteenth century ; a book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these are not about the indian curry that is popular today, but instead descriptions of the types of meals on the tables of the rich and wealthy people of that period.

In the 15th century, knights returning from the crusades brought us many foods and spices from Arab cuisine, including basil and coriander. These new herbs and spices prompted an increase in books on cooking, many of which are kept safe in private collections.

Over the following few centuries, the wealthy families of Europe competed with each other to serve up the most extravagent meals, and because of this the best cooks and their recipe collections increased in prestige. Nevertheless, it wasn`t until the nineteenth century that fine cooking and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes to help cooks of their time.

When we get to the 1900s, recipe publications are in high demand, as a result of higher levels of literacy, more leisure time and a general increase in wealth.

The arrival of TV brought us cooking programs and the demand for the accompanying recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like those on sites such as this.
