The History of Recipes
Historians have found proof that recipes existed back into the distant past, certainly as far back into recorded history as the Egyptians, and possibly even further than that. In practice though, in the main part, these old cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe in existence, according to experts in ancient history are some clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in Roman times 25BC a man called Apicius assembled a number of scripts detailing recipes prepared by his fellow Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and desserts, a very modern way of dining. Aspicius tells us how the ancient Romans made use of a good variety of spices and herbs, including a few that will be familiar to modern chefs for example thyme, rue and asafoetida. During the succeeding few hundred years, the powerful families of Wesstern Europe competed to serve the best banquets, and as a consequence, cooks and their recipe collections increased in prestige. Notwithstanding that, it was during the 19th century that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing recipes common in their social group. Like it or not, the introduction of television brought us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on this site. |
