The History of Recipes
Written cooking instructions as an idea can be found way back into ancient history, in fact as far back into history as ancient Egypt, and possibly even further. Interesting though that maybe, these, early cook books were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to academics is a series of stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes prepared by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into appetizers, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the early Romans used a wide range of spices and herbs, including a few that will be familiar to modern chefs like thyme, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from the holy land, including spices such as coriander, basil and rosemary. The introduction of these new culinary ideas led to an outbreak in manuscripts on cooking, the majority of which are kept safe in private libraries. By the time we get to the 1900s, cookery publications were starting to become popular due to better eduction, leisure time and having more disposable income. The arrival of television brings us celebrity TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on this site. |
