The History of Recipes
Recipes as a concept can be observed way back into distant history, certainly as far back into recorded history as early Egypt, and maybe even further. Having said that, mostly, these ancient cook books were just primitive hieroglyphic or cunieform recipes for meal preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a few documents detailing recipes prepared by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, something we still use today. Additionally, he informs us how the cooks of his times were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks such as thyme, fennel and parsley. In the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the Middle-East, including spices such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused a torrent in cookery books, most of which still exist in private libraries. When we get to the 1900s, cookery publications were highly popular mostly as a result of increased literacy, leisure time and having more money to spend. |
