The History of Recipes
Written recipes as an idea can be observed way back into distant history, in fact as far into history as pharonic Egypt, and quite possibly further than that. In practice though, generally, these ancient cook books were just very simple hieroglyphic instructions for food preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a collection of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Much later, in Roman times a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by his fellow Romans. He recounts how the roman meals were separated into appetizers, main meal and afters, something we still use today. He also describes how the ancient cooks made use of a good variety of aromatic flavours, including many that are still in use today for example bay, fennel and dill. Over the succeeding few hundred years, the upper-class families of the West strove to serve up the most extravagent meals, and because of this the best chefs and their collection of recipes became highly prized. Notwithstanding that, it was during the 19th century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, trying out, and recording recipes of the day. When we get to the twentieth century, cookery publications were greatly in demand as a result of higher levels of literacy, people having increased free time and disposable income. The TV revolution brings us TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing us all to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
