The History of Recipes
Historians have proved the existance of recipes far back into distant history, in truth as far back into history as early Egypt, and potentially, even further back. Interesting though that maybe, mostly, these early cook books were just very simple pictorial recipes for food preparation.
Much later, in Roman times a roman called Apicius compiled a few documents detailing recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into appetizers, entrees and desserts, something we still use today. Aspicius recounts how the ancient Romans were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs for example basil, mint and asafoetida. Over the succeeding few hundred years, the rich and powerful families of Europe competed to serve the most exotic banquets, and as a consequence, the best cooks and their recipes could command a high salary. Nevertheless, it was during the 1800s that fine cooking and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, trying out, and publishing recipes of the day. The TV revolution brings us TV cooks and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on sites such as the one you are reading now. |
