The History of Recipes
Recipes as an idea can be found back into history, in fact as far as the early Egyptians, and possibly even further. Interesting though that maybe, these, ancient cookbooks were just simple hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe discovered, according to experts is a series of tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Later on, in The time of the roman empire 25BC a man called Apicius created a collection of scripts describing recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. Additionally, he recounts how the ancient chefs made use of many herbs, including a few you will know like bay, mint and parsley. Later, we have a couple of interesting recipe books which date from the fourteenth century - a recipe book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, they are nothing to do with the indian curry that is familiar to us all today, but rather descriptions of the types of food cooked for the rich and wealthy people of the time. Later, in the fifteenth century, knights returning from the crusades brought us many spices and herbs from the holy lands, including coriander, parsley, and rosemary. The introduction of these new foods and spices was responsible for an outbreak in recipe books, most of which are now in private collections. By the time we get to the 1900s, cooking publications are in high demand, mostly due to better eduction, people having increased free time and disposable income. |
