The History of Recipes
Recipes as an idea can be traced far back into the far past, certainly as far back into history as the ancient Egyptians, and potentially, even further back. Interesting though that is, mostly, these ancient cookbooks were just very basic hieroglyphic recipes for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of scripts describing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the ancient Romans used many different spices, including a few that will be familiar to modern cooks such as thyme, mint and asafoetida. Over the following few centuries, the wealthy families of the West competed with each other to serve up the best banquets, and because of this chefs and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and publishing popular recipes of the day. By the arrival of the twentieth century, cooking books were in great demand, due to higher levels of literacy, increased leisure time and being a little richer. The introduction of television brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like those on this recipe site. |
