The History of Recipes
We can trace the history of `recipes` back into distant history, in truth as far back as early Egypt, and maybe even further. In practice though, sadly, these old cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered so far, according to experts in ancient history are some stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into Roman times around 25BC a man called Apicius compiled a number of scripts which described recipes cooked by the Romans. In his publication, he tells us how the meals were divided into appetizers, main course and desserts, a very modern way of dining. Aspicius also informs us how the ancient chefs made use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example basil, mint and parsley. Later on in the 1400s, knights returning from the crusades brought us many new foods and herbs from middle-east cuisine, including spices such as parsley and basil. The introduction of these new tastes created a torrent in recipe books, the majority of which still exist in private cookery archives. By the advent of the twentieth century, recipe publications are starting to become popular mostly as a result of higher levels of literacy, increased leisure time and a general increase in wealth. The introduction of the TV brought us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes just like those on our web site. |
