Chocolate Teacake Recipe


Ingredients

2 1/4 cup flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
6 tbsp cocoa powder
2 oz butter
1/2 tsp vanilla extract
1/2 cup sugar
1 egg
1 cup buttermilk
2 oz currants, plumped in warm water an
2 oz chopped pecans


Directions

PREHEAT OVEN TO 350F. Sift together the flour, baking powder, baking
soda, salt and cocoa. Cream the butter, add the vanilla and sugar,
beat until light, about 5 minutes. Add the egg. Add the dry
ingredients in three additions, alternating with the buttermilk. Do
not over mix. Stir in the currants and nuts. Pour into a greased and
floured 7-by-5-by-3-inch loaf pan. Bake for 1 hour 10 minutes. Cool
in the pan 10 minutes, remove and cool on a rack.

Later on, in The time of the roman empire around 25BC a man called Apicius compiled a few documents which described recipes enjoyed by wealthy Romans. He describes how the meals of wealthy Romans were separated into appetizers, main meal and afters, something that is very familiar to us today. Aspicius tells us how the chefs of Roman times used many herbs and spices, including a few that will be familiar to modern cooks like bay, mint and parsley.

Later, in the fifteenth century, the Crusaders brought back many new foods and spices from the East, such as coriander, parsley, and rosemary. These new herbs and spices created an explosion in manuscripts on cookery, some of which still exist in private cookery archives.

During the following few hundred years, the wealthy families of the West tried to serve the most extravagent meals, and as a result cooks and their recipes were at a premium. However, it wasn`t until the 19th century the formal cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, testing, and publishing recipes to help cooks of their time.

By the advent of the twentieth century, recipe books are increasing in popularity as a result of higher levels of literacy, people having increased spare time and having more disposable income.

The introduction of the TV brought us celebrity chefs and the demand for the spin-off recipe books.
